Saffron Coconut Macaroons

Macaroons are small and fine. The addition of coconut does not only tastes great, but is also very healthy. And the touch of saffron gives these macaroons a noble and unusual touch.

Ingredients: ingredients for about 40 pieces

3 egg whites

150 g sugar

200 g coconut rasps

1 pinch of salt

0.5 g of saffron threads

some grated lemon peel

wafer paper 40 mm

Preparation:

Whisk the egg whites well with the salt and then add the sugar and stir until the sugar has completely dissolved and the mixture is stiff. Crush the saffron threads and dissolve in some hot water until the water turns yellow. Add the grinded coconut rasps and the lemon peelto the  dough. Put small portions on the wafer paper. Bake in the oven at 150 ° C or 160 ° C top and bottom heat for about 15 minutes. Then cool and store in biscuit jars.
