Saffron Muffins with whipped saffron cream

Saffron Muffins: Everybody loves Muffins and justifiably so. Delightfully fluffy baked they are the perfect pastry for every occasion. Their versatility is great, that is why you should definitely try our Saffron Muffins! If you literally want to cap it all, just beat some cream and put it on top et voilà: You have the best homemade cupcakes!

Ingredients for 18 Muffins:

3                   Eggs

180 ml          Vegetable Oil

150 g            Yogurt

200 g            Sugar

0.25 g           Saffron threads

300 g            Flour

2 teasp.         Baking soda

 

Ingredients for whipped saffron cream:

200 ml                 Whipped cream

0.1 g                    Saffron

Preparation:

Beat vegetable oil with sugar until foamy. Afterwards, stir eggs and add yogurt and saffron threads. Sieve flour with baking soda and mix it with the rest. Add the other ingredients and stir until smooth.

Fill the dough evenly in muffin liners placed on a baking tray. Bake in the preheated oven at 170°C top / bottom heat for 20-25 minutes.

Beat whipped cream until stiff. Grind the saffron in a small mill. Mix whipped cream and grinded saffron carefully. After Muffins cooled down, put saffron cream on the Muffins.
