Persian Pistachio Saffron Cookies

Saffron Pistachio Cookies: Pistachios originated from the Middle East, are rich in vitamins, iron, potassium and other valuable nutrients. Therefore, in sweet pastries they are not only healthy but also very delicious! These Pistachio Cookies can be eaten with good conscience.

Ingredients

250 g               Butter

75 g                 Powdered sugar

1                       Egg (large)

250 g               Wheat flour

˝ package    Baking soda

100 g               Pistachios

0.5 g                Saffron

1 package     Small paper muffin cases

Preparation

Preheat oven to 180°C. Preparatory, shred 55 g of the pistachios in a kitchen shredder. The rest of the whole nuts is used later as decoration. Now, mix softened butter, powder sugar and egg with a mixer in a large bowl. Grind the saffron in a small mill or in a comparable manner. Afterwards, add flour, baking soda, saffron and the shredded pistachios and mix them well once again. Lay out the oven tray with paper muffin cases. Fill the dough by means of a piping bag in the paper cases, in order to create a beautiful flower shape. Now, place the remaining pistachios on the dough in the paper cases and bake them for 20 minutes. Afterwards, let them cool down until they are ready to eat.
