Carrot-Plum Sauce with Chicken and Saffron Rice

This is a typical Iranian recipe and simply delicious. The combination of the sweet-sour plum paired with the savoury sauce is excellent. Through the relatively long boiling time the chicken breast is incredibly tender while the carrots are still al dente. All in all, a fantastic and easy dish!

For 2 persons:

Ingredients:

200 g                    Carrots

200 g                   Chicken Breast

200 g                   Dried Plums

1 pinch                 Salt

1                          Onion

1 pinch                 Pepper

0.5 g                    Saffron

5 tablesp.             Olive Oil

Preparation:

Cut onion in small squares and steam it in a pan then add chicken and carrots and roast gently. Add approx. 2 cups of water. Insert plums, saffron, pepper and salt and mix well. Boil it on low heat for about 45 minutes. Your Saffron Expert wishes you bon appetite!
