Spain is world famous for its saffron cultivation in Europe. The saffron threads from this geographic area are particularly aromatic and have a lot of volume, as you can find the optimal climate that the saffron plant needs to thrive perfectly. In winter it is cold and in summer it is hot and the soil is clayey and dry. The La Mancha saffron quality can be obtained by completely removing the 3 stigmas from the fresh saffron flower. The white components are removed carefully. The orange and red components of the saffron threads remain. In order to retain a lot of volume, all 3 stigmas remain connected
